Red Red Wine Pasta Sauce

Named after the Neil Diamond song, Red Red Wine, this pasta sauce is a full-bodied, velvety red wine sauce infused with the robust flavours of roasted peppers, smoked garlic, and tomatoes. Featuring Fiasco, a shiraz from the Adelaide Hills made with Sangiovese and Nebbiolo grapes, it boasts deep, juicy undertones, making it a perfect pair for the rich flavours of Australian iron bark-smoked garlic, sweet local roasted red peppers and Roma tomatoes. Bronze medal winner at the 2024 Sydney Royal Fine Food Show.

Serving Suggestion
Bring the pasta sauce to a gentle simmer and toss through hot al dente pasta, with 100ml of cream, a generous splash of pasta cooking water, a knob of butter, and grated parmesan cheese. It is also perfect to elevate your bolognese or slow-cooked ragu. Serve with a glass of red wine, or your favourite pasta-pairing cocktail.
